Fluffy Chocolate Mousse

Ingredients

  • 125 g light cream cheese softened to room temperature, cut into small cubes
  • 0.5 cup caster sugar
  • 250 g milk chocolate
  • 300 ml thickened cream

Instructions

  • Beat cream cheese, sugar and egg together until smooth.
  • Place chocolate into the microwave for 20s periods, stirring between each period until melted. BE CAREFUL NOT TO BURN THE CHOCOLATE.
  • Beat the cream to soft peaks. DO NOT OVER BEAT THE CREAM.
  • Add the melted chocolate to the cream cheese mixture and stir through until well combined.
  • Fold in the whipped cream until well combined.
  • Place in refrigerator until required.
